Hi - I’m Cole, and welcome to Fourth Floor Bakery.

Growing up, I was never a huge fan of TV (I’m still not). While everyone found peace lounging to a show, I found it in the kitchen, working alongside my mother to prep and cook dinner for my family.

From there it was bagels in my college apartment, bread in culinary school, and eventually pastry work in NYC. Most recently, I've been teaching baking to young adults with special needs, which has been an incredible and rewarding experience.

My obsession with the perfect cookie started when I set out to recreate a cookie from my days as a barista at a French bakery. I spent many late nights testing flours, butters, and eating more cookies than I could handle alone.

That’s when my obsession found its way into other people's freezers. I distributed dough balls to friends, neighbors, and anyone who would take a bag and report back. 

I believe a great cookie shouldn't require a trip to a bakery. It should be waiting for you. It should be there for your roommates after a long day, for your friends on a Friday night, or for that moment just for yourself.

That's what this is all about. Delicious cookies made to be ready whenever you are.
